I’ve been on a spaghetti kick lately. I remember when I was little, my mom always used to make it. My sister loved it and always asked for it. I hated it. I don’t know why; I just didn’t think it tasted very good. Now that I’m older, I see why my mom used to make it all the time: it’s fast and easy; add a salad topped with veggies, and you’ve got a filling healthy meal. Plus, I have a couple little tweaks that make all the difference – angel hair noodles instead of spaghetti noodles, and fresh, grated, locally made Parmesan cheese. Maybe it’s the tweaks that make it taste better; but it’s the flavor of memories from home that make me enjoy every bite.
My sister had her second child this weekend, so I’m a little sentimental. Welcome to the world baby boy. I can’t wait to meet you. One day, I bet your mommy will make spaghetti for you too.
